How to select a sushi chef
Ask the candidate to show how they cook and season rice, form a roll and cut fish. Pay attention to hygiene: clean hands, a tidy table, separate boards for raw fish. This is basic safety, not a detail.
Ask how they recognise fresh fish, how they store it and what they do with leftovers. Also find out whether they have worked in a stream of orders and can keep pace without losing quality. Discuss the terms in advance: who keeps product records, and whether there are write-offs.
