How to find a pastry chef: cakes, desserts, baking
First decide what they will make
A pastry chef may be a master of custom cakes, may bake desserts for a restaurant, or may assemble macarons and French pastries. These are different skills, and looking for one person to do everything rarely works. So in your request, say it plainly: fondant cakes, mousse desserts, everyday baking or something else.
Where the person works matters just as much. In a separate production unit, they have their own area and equipment, while in a cafe they share the kitchen with the cooks.
What to write in the listing
- What to make — custom cakes, individual desserts, pies, sponges, prepared bases.
- Skills — mirror glaze, fondant, assembling mousse cakes, cream decoration, chocolate work.
- Type of place — pastry unit, restaurant, cafe, hotel.
- Place of work — city and area, for example Dubai.
- Schedule — 2-on-2-off, 5-on-2-off, early shifts, festive-season peaks.
- Salary — from AED 1,300 a month or pay per shift, a share of orders.
- Employment — formal contract, full or part time.
- Experience — 2+ years, and whether a portfolio is needed.
Example request
“A pastry unit in Dubai needs a pastry chef for custom cakes. Mirror glaze, mousse cakes, decoration. 2-on-2-off schedule, formal contract, from AED 1,300 a month. 2+ years of experience, a portfolio is preferred.”
How to assess the craftsperson
The best argument is their work. Ask to see photos of finished cakes, or better still, have them make a test item: sponge, cream, assembly. Watch hygiene and discipline: cream temperature, sticking to the recipe, timing.
Ask whether the candidate can do costing and calculate the cost of a dessert, and whether they have worked from recipe cards. For a unit, this is almost as valuable as the skill itself. Find out which equipment the person has used: blast chiller, planetary mixer, tempering machine, convection oven. For the festive-season peak, discuss overtime shifts and their pay right away.
Agree on storage of finished products and shelf life: cream cakes need refrigeration and exact records, and the pastry chef must understand that.
How it works through BlaBlaPrice
You write the listing in one request, and it is checked for ads and stray contacts. Then candidates send replies in the chat: what they can do, when they can start, what pay they want. You open the phone number only for the one you choose. A request stays active for 7 days and can be extended. More in how it works.
